Introduction

Ingredients

    1 cup Zucchini
    1/2 cup flour
    2 egg whites
    2 Tbsp green curry paste
    1 Tbsp fish sauce
    1 green onion, chopped
    1 birds eye chili (sliced)
    1 handful herbs such as cilantro, mint, Thai basil (chopped)
    1 tablespoons oil or cooking spray

Directions

Mix the zucchini, flour, egg, curry paste, fish sauce, green onions, birds eye chili cilantro and mint in a bowl. Heat the oil in a pan. Spoon the zucchini mixture into the pan and cook until golden brown on both sides, about 4 minutes per side. Serve with spicy peanut sauce.
