Introduction

Ingredients

    2 Skinless chicken breast OR 5-6 chicken tenderloins
    1/2 Red Bell pepper
    1 small onion
    1 zucchini
    1 celery stalk
    5 baby carrots stripped or 1 carrot stripped
    1 cup frozen oriental mix veggies (shoprite)
    3 tsp minced garlic
    3 TBSP Honey

    FOR THE SAUCE
    3/4 cup soy sauce
    1/4 cup water
    1 tsp sesame oil (a little goes a loooong way)
    5 tsp packed brown sugar
    1 tsp ground ginger
    1 tsp minced garlic
    1/2 tsp ground coriander and cloves (optional)
    1/2 tsp ceyenne pepper (optional)

    1 package of 12 rice spring roll wrappers

Directions

1. In a skillet, cook chicken and drizzle the honey on both sides. (Mean while, chop/slice thinly the veggies and set aside and assemble all sauce ingredients in a separate bowl) Allow the honey to carmalize and create a gooey crust on the chicken. Take out and set aside.
2. Use the same skillet and add 2 sprays of cooking spray and the frozen veggies. Allow to cook. Add one small ladle of sauce.
3. Add the chopped veggies and garlic. Allow to cook 5 minutes or until tender. Add 1-3 more ladles of sauce.
4. Chop the chicken finely and add to saute
5. Place the mixture in a bowl and set aside.
6. Follow directions for wrappers (place one in hot water for 15-20 sec, place on PARCHMENT PAPER, blot with tea towel until sticky
7. Preheat oven to 410 degrees.
8. Place 1/11 of mixture (approx.) onto wrapper and roll up tightly like a burrito.
9. Spray the seal end with cooking spray and place seal end down on cookie sheet.
10. Spray the tops lighlty and place in oven for 5-7 minutes. Then turn up to broil and watch for them to SLIGHTLY gain color on top (3-5 minutes) and remove immediately.
11. Serve with remaining sauce as dipping sauce (so, basically, the nutritional information includes 1/11 of the sauce and there is a lot left over for dipping)
