Ingredients

    1-2 tbsp canola oil
    1-2 tsp toasted sesame oil
    1 med onion, chopped
    4 stalks celery, chopped
    1 chunk fresh ginger, minced (to taste)
    4 oz fresh mushrooms, chopped
    6 oz chicken breast (grilled or poached), cut in bite size pieces
    3 c brown rice
    1 lg egg
    1-2 tbsp soy sauce

Directions

Heat oil in frying pan on medium high heat. Saute vegetables until translucent. Add ginger, mushrooms, chicken and heat through. Add rice. Continue heating and stirring until very hot. Add egg and stir quickly to coat rice and cook egg. Stir in soy sauce.
