Introduction

This is an unusual tasting curry with the addition of goraka paste found in Indian stores. Goraka is a fruit found in tropical countries. It imparts a very distinctive mild smokey flavor. Ingredients

    Beef - Stew Meat - Cubed -12 oz raw
    Raw White Onion (Serving = 1 medium Onion) CHOPPED
    Cumin and Corriander seeds powder, 2 tbsp
    Fresh Ginger Root, 2" piece, GRATED
    Mustard seed, yellow or black, 1 tbsp
    12 curry leaves
    Canned Tomatoes, 2 cup
    Goraka Paste, 2 tbsp
    Coconut Milk, 1 cup
    Water, tap, 4 cups (8 fl oz)
    Red Chillies (1 chillie), 3 serving
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Olive Oil, 1 tbsp
    5 garlic cloves, minced

Directions

Heat a large dutch oven over medium high heat. Add olive oil and when it begins to ripple add the beef and brown on all sides. Add the mustard seeds and when they begin to pop add the onion, garlic, ginger and curry leaf until the onion begins to look translucent. Then add the corriander, cumin and red chilies. Fry the spices with the meat for a few minutes until they become fragrent then add the coconut milk, tomatoes, goraka, water, salt and pepper. Bring mixture to a boil and then reduce to medium heat and cook until the beef is tender. You may need to add additions of water if the mixture becomes too thick, depending on how much it reduces. Make sure to taste the curry and add more spices for a stronger flavor and chillies for added heat.

Serve with basmati rice.
