A veggie packed Mediterranean flavored dish that's really easy to make! A veggie packed Mediterranean flavored dish that's really easy to make!
Number of Servings: 2


    8oz of Turkey Keilbasa
    1 tbsp Olive Oil
    5 spears of asparagus (about 1/2 cup chopped)
    1/4 cup chopped turnips
    2 cups chopped Swiss Chard
    1/4 cup chopped red onions
    2 small stalks of celery
    1/2 each of red and orange peppers

    1/4 cup dry red wine
    ~1 tbsp balsamic vinegar
    Spices to taste: Mrs. Dash and garlic salt

    1/4 dry quinoa
    2 oz shredded fresh parmesan


Cook the quinoa (add to simmering water and cover)

Chop the keilbasa into half circles and saute them in the olive oil slightly until they brown just a bit.

Add all the chopped vegetables and saute for another minute or two

Add the wine, vinegar, and spices

Allow the whole dish to cook uncovered stirring occasionally for about 7-8 minutes

Add the cooked quinoa and cook for another minute or so

Grate fresh, hard parmesan over the top just before serving
