Ingredients

    1 bag frozen mixed vegetables (gumbo mix is best, I used italian, whatever you prefer)
    2 cups chicken (or vegi for completely vegan) broth
    2 tablespoons cajun seasoning
    2 cloves of garlic minced fine
    1 can black beans rinsed
    2 cups pre cooked rice.

Directions

Dump all ingrediants besides rice in medium sauce pan. Bring to a simmer. Add rice and simmer until some liquid is absorbed. Serve hot, if you like it spicier add a splash of louisana (red hot) hot sauce. Makes 4 servings.
