Ingredients

    3 cups Green Giant frozen mixed veggies
    1 small potato chopped small
    176 grams herbed tofu extra firm (half a pack)
    1 can cream of mushroom soup
    1 cup Bisquick
    1/2 cup milk
    1 egg

Directions

Mix veggies, chopped potato, tofu and mushroom soup in a 9 inch square pan, stir. Mix last three ingredients and pour over veggie mix. Cook in oven at 400 degrees for 30 to 35 minutes. Serves six.

    I think next time I will add more soup, it was a little light on the sauce, but very good. - 2/10/08
