Number of Servings: 3


    3 ounces boneless skinless chicken (3 tenderloins)
    1 whole green pepper diced
    1 whole "tree" of brocolli cut
    1 cup tomato sauce
    1 13 ounce can of lite coconut milk
    1 tablespoon red curry paste
    1 cup prepared brown rice
    1 tablespoon canola oil


1. Dice pepper and cut brocolli.
2. Cook chicken on stovetop until almost cooked through using the oil
3. Add all other ingredients except for rice.
4. Let simmer on medium low for 20 minutes.
5. Serve on top of prepared rice
