Introduction

Very tasty and easy to prepare breakfast or anytime meal. Fresh ingredients and the use of egg beaters make this a very healthy meal. Very tasty and easy to prepare breakfast or anytime meal. Fresh ingredients and the use of egg beaters make this a very healthy meal.

Ingredients

    2 small red potato
    1/2 cup bell peppers(green, yellow, red, orange) whichever you have on hand
    1/2 cup sweet onions or scallions
    1 cup of baby portabello mushroom
    1 plum tomato
    1 cup egg beaters
    1 tbsp olive oil
    1 tbsp olivio spread

Directions

Slice potato into thin round slices. Dice bell peppers, onions, tomato and mushroom. Set aside

In a frying pan add olive oil and red potato. Cook potatoes until they brown. Add all vegetables. Saute a few minutes. Add olivio spread and stir into vegetables. Pour egg beaters into frying pan. Set temperature to low heat and cover. Cook until egg is dry and flip, if desired.
