Ingredients

    APPLESAUCE CARROT MUFFINS

    1/2 c. raisins 1 egg
    1 c. flour 1/2 c. sugar
    3/4 c. wheat flour 1/4 c. oil
    1 tsp. soda 1/8 tsp. vanilla
    1/2 tsp. salt 1/8 tsp. lemon extract
    1 tsp. cinnamon 1 c. applesauce
    1/2 tsp. nutmeg 3/4 c. grated carrots


Directions

Combine raisins with 1/2 c. warm water and let soak.
Combine flours, soda, salt & spices. In another bowl
beat egg & sugar until fluffy. Beat in oil & vanilla &
lemon extract, then stir in applesauce. Stir apple-
sauce mixture into flour mixture only until blended.
Quickly fold in carrots & raisins (with their water).

Bake 400 degrees - 15 to 18 minutes. Enjoy!!! Makes 12
