Ingredients

    Jiffy Corn Muffin Mix - 2 boxes
    Jimmy Dean Premium Pork Light Sausage 12 oz roll
    Lean Ground Beef 1 lb
    Kraft Minute Brown Rice 1 family size boiling bag
    Garlic 2 tsp minced
    Rotel Original Diced Tomatoes with Chiles 1 can
    Hunt's Petite Diced Tomatoes in Sauce 1 can
    Green Bell Pepper 1 whole pepper chopped
    Green Giant canned mushrooms 1 can

Directions

Prepare corn muffin mix as instructed on the box.
Saute Garlic and bell pepper in 1 tbsp olive oil.
Add in ground beef and sausage and cook til browned.
Add all remaining ingredients except for corn muffin mix.
Spray a medium casserole dish with cooking spray.
Pour 1/2 of the corn muffin mix in the dish.
Put a layer of your stuffed bell pepper mixture on top of that.
And pour the rest of your corn muffin mix on top.
Cook according to instructions on corn muffin mix box.

Makes 8 1 slice servings

    Thank you so much. I also posted the same recipe using ground turkey instead of the beef. It's about 4 grams of fat higher, but the calories and the protein are better.
