*Pasta, Ronzoni Smart Taste , 2oz/dry = 1 serving, 14.5 oz(whole box of penne is what I used)
Eggplant, fresh, .5 eggplant, unpeeled (approx 1-1/4 lb
Spinach, fresh, 2 cup
Tomato, grape (3oz = approx 12 tomatoes), 12 oz (one whole plastic box)
*Extra Light Olive Oil, 4 tbsp
*Fresh Garlic Minced, 2 tbsp
Basil, 1 tbsp (fresh or jarred)
Salt, 1 tsp
Pepper, black, 1 tsp
Any other italian spices you might want (oregano, etc)
*Cheese, fresh mozzerella, in water, 8 oz
Directions
Makes 7 servings (about 1.5 to 2 cups each)
Cut the grape tomatoes in half.
put the olive oil in a med. heat pan. Add garlic and cook for about 2 minutes.
Add the eggplant, spinach and tomatoes. After about 6-8 minutes, squish all the ingredients with a potatoe masher to make a thick, chunky sauce. Add water & simmer to create sauce consistency desired.
Cook pasta according to package instructions. Drain. Serve with sauce on top.
Toss hot sauce with freshly cooked pasta in a large bowl. Add the mozzerella and toss some more until partially melted.
