Number of Servings: 4

Ingredients

    4 cloves of garlic
    4 scallions, sliced
    4 cups brown rice, cooked
    1 red bell pepper, chopped
    1 1/2 cups edamame
    1/2 cup yellow corn
    1 lb. chicken breast, boneless, skinless, chopped
    2 eggs, slightly beaten
    4 tbsp. soy sauce, low sodium

Directions

Spray skillet with cooking spray. Add chicken and cook through. Add garlic and scallions. Cook for 3 minutes.

Add rice, pepper, edamame, and corn. Heat through.

Make a well in the center of the skillet and spray with cooking spray. Add beaten eggs. After eggs are cooked combine with rice mixture and add soy sauce.

One serving is 1 1/2 cups. Makes 4 servings.
