Ingredients

2 large sweet potatoes
2 chicken bullion cubes
1/2 lb ground pork
1/2 lb ground lamb
1 onion, minced
4 cloves garlic, minced
2 carrots, chopped pea-size
2 celery stalks, chopped pea-size
1/2 red pepper, chopped
1/2 yellow pepper, chopped
1/2 cup cheddar cheese, shredded
Directions
1. Preheat oven to 350 F. Peel, cube and boil yams until soft, drain and reserve 2 cups of hot water. Dissolve 2 bullion cubes in reserved hot water. Mash yams with chopped fresh parsely. Mix in just enough hot water to make yams spreadable.
2. Combine ground lamb and pork with spices. Cook over medium heat in a large skillet or saucepan with onion, garlic, carrot, celery, red and yellow peppers. Drain or use baster to remove excess grease. Continue cooking until meat is no longer pink and carrots are softened.
3. Transfer meat and vegetables to a large casserole dish. Spread yams on top and sprinkle with cheddar cheese. Bake at 350 F for 20-25 minutes or until cheese is melted.
