Ingredients

    Cinnamon, ground, 0.5 tsp
    Fiber One Cereal, 0.5 cup
    Pumpkin, canned, without salt, 1 cup
    Kraft CoolWhip Free, 16 tbsp (1 cup)
    Jello Pudding Snacks, Vanilla Sugar Free, 1 serving (approx .5 cup)

Directions

This recipe is adapted from a Hungry Girl recipe -the original called for 1 cup pumpkin, 2 pudding snacks, 3/4 cup fiber one, and a half container light whipped topping. But is it a little container or a big one?

So decided to make a smaller amount, and I'm playing around with the ratios of ingredients. I've previously enjoyed it with 1.5 cups whipped topping, .66 cup pumpkin, 1 pudding cup, .33 cup fiber one.

Try it out and tell me which combinations you like best!

Mix ingredients together, spoon into nonstick muffin tray or popsicle maker and freeze.

    I loved everything about this snack- except for the fiber one. I think I'll exclude this ingredient next time as the frozen texture of it really wasn't pleasant. The vanilla pudding definitely adds enough sweetness. Thanks for the idea! - 6/5/07
