Ingredients

    Ingredients
    1/2 Cup uncooked Barilla Plus Farfalle (4 oz)
    Cooking spray
    20 Large Shrimp
    1/2 teaspoon salt
    1/2 teaspoon freshly ground black pepper
    1 tablespoon Pine Nuts
    1 clove mince garlic
    4 tablespoons golden raisins
    2 tablespoons fresh orange juice
    1 1/2 tablespoons chopped pitted kalamata olives
    4 tablespoons chopped bottled roasted red bell peppers
    1 Cup Shredded Red Leaf Lettuce

Directions

Preparation

Bring water to a boil and cook pasta per directions on box until aldente.

Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Sprinkle shrimp evenly with salt and black pepper. Add fish to pan; sauté on each side shrimp turns pink.. Remove fish from pan; cover and keep warm.

Recoat pan with cooking spray; add nuts and garlic to pan. Sauté for 30 seconds. Add tablespoons raisins, orange juice, kalamata olives, and bell pepper to pan; cook 1 minute or until liquid evaporates. Toss with pasta. Add lettuce and toss. Top with Shrimp.

I made with Shrimp, but would be equally as delicious topped with grilled chicken.

Top pasta with shrimp and enjoy!
