Ingredients

    1 1/2 cup whole wheat flour, 1 Tbs baking powder, 1 tsp salt, 4 egg whites, 1 3/4 milk, 1/4 cup cooking oil, 1/4 cup applesauce

Directions

Combine flour, baking powder and salt; set aside. Place 2 egg whites into glass mixing bowl, reserve 2 egg whites in another bowl. Add milk, oil and applesauce to reserved egg whites. Mix well and add all at once to flour mixture. Stir just until moistened (batter will be lumpy). Beat remaining egg whites until stiff peaks form. Gently fold into batter (do not mix in completely). Use about 1/4 cup of batter per waffle. Recipe will make 5 Belgian waffles (or you can make 12-14 (4 inch square) waffles). If short on time, use 2 eggs without separating yolks. Blueberries are a great addition, as are diced apples with cinnamon.
