Ingredients

    1 lb lean ground beef
    1 onion diced
    2 tbsp rice flour
    1 cup beef stock
    1 10oz. pkg frozen mixed vegetables
    1 large Sweet Potatoe boiled with
    1 large russet potatoe
    1/3 cup sousr cream or yogurt ( low fat)
    1 Tbsp calorie reduced margarine

Directions

saute beef and onions until cooked add the rice flour and stir and brown. Add the stock and simmer till thickened. Cook potatoes and mash with the sour cream and margarine.
Layer beef mixture in an oven proof casserole and layer with the mixed vegetables. top with mashed potatoes and sprinkle with paprika. bake 350 degrees for 30 minutes.
makes 6 good size servings
