Introduction

Ingredients

1/2 cup butter (can do 1/3 cup of applesauce and 1 tablespoon of oil)
1 cup of sugar
2 eggs (substitute or egg whites will work too)
3 large, very ripe bananas, mashed
1.5 cups sifted flour
0.5 cups whole wheat flour
1 tsp baking soda
0.5 tsp salt
0.5 cup chopped nuts
Directions
Cream butter and sugar thoroughly. Add eggs one at a time, beating after each addition. Add mashed bananas and beat well. Sift flour, soda, and salt together, and add wet ingredients, mixing well. Stir in nuts. Pour into loaf pan that has been sprayed with nonstick spray. Baked at 350 degrees for 55-60 minutes. Allow to cool thoroughly before slicing.
This recipe could have several substitutes to fit into your dietary needs. Splenda or Truvia for the sugar; egg whites or egg beaters for the eggs; applesauce and canola oil for the butter, and can leave out nuts. I wouldn't use all whole wheat flour as the bread would be very dense and not rise alot.
