Ingredients

    8 oz chicken breast, no skin, no bones
    2 TBS fat free butter spread (I prefer promise fat free)
    1 sweet potato, about 5" long
    1.5 TBSP salt (I prefer sea salt)
    3 tsp Franks red hot or Texas Pete hot sauce
    1 tsp black pepper, ground (I prefer using freshly ground peppercorn, to taste)
    1-2 servings of vegatable oil spray

Directions

To prepare the sweet potatoes:
Wash the sweet potatoes. Cut them with or without skin to desired fry size (I like small string fries, but you can try wedges) coat a foil lined baking sheet with cooking spray, toss potatoes with cooking spray and sea salt, lay on baking sheet and bake for 15-30 minutes, depending on size and texture desired.

To prepare the chicken:
Rinse chicken and cut into pieces- strips or bits. Cook in covered frying pan with water, almost enough to cover chicken pieces. Mix hot sauce and butter (the butter shouldn't need to be melted, it gets pretty soft at room temperature). Remove chicken from frying pan when done (usually no more than 15-20 minutes depending on the size of the chicken pieces), coat in hot sauce/butter mixture and enjoy.
