This is a variation on one of those 1970s "fat burning" cabbage soup recipes. The original recipe claims, "this soup will not add calories, the more you eat the more you lose," which is silly, but it is very low-cal and tasty. Based on the ingredients I entered here, it's 91 calories for a two-cup serving.

This is a tweaked version of a recipe I found on CookingLight.com. Perfect, light Mediterranean meal with colors that pop. Best made ahead of time and chilled in the refrigerator until mealtime. Delicious served with half of a whole wheat pita cut into wedges.
