Actually Im not a Salat fan, but since its a very healthy choice I figured how to pimp my salad to make it just a pleasure to eat.
Very easy and a good choice for lunch to go ;)
This is my updated version of my mother's potato salad. It is always requested for every family function. Making it a day in advance helps the flavors blend even better.( I usually cook the potatoes in the pressure cooker for about 10 minutes then let it cool down naturally.)
This is a great ultra-low fat and thick soup that is wonderful for winter. Great by itself with some crusty bread or as a side dish. Also very good spooned over a baked potato.
