I absolutely LOVE this recipe! I use the homemade style noodles in this soup, but any noodle will do just fine.
SOOOOOO nutritional and healthy! Low sodium, but potassium-rich, and nothing but YUMMMMMMMM! Serve with low sodium blue corn tortilla chips, such as Nature's Promise or Garden of Eatin' brands..... MORE than an appetizer! Also good served on top of chili or beans.
The nutritional bang for the buck is phenomenal in this pot of healthfulness! Low fat, low carb, high fiber, high protein!!! I put turnips in mine, which I hate, and which you could leave out, but I guarantee you, you can't taste them at all! You can also use whatever fresh produce you have on hand, like carrots instead of the sweet potato, veggie broth rather than chicken to make it vegetarian friendly, a can of diced tomatoes if you don't have fresh, etc. Don't be afraid to experiment!
All the flavor with less fat and less sodium!! This recipe actually has less sodium than the nutritional info states, because I drained the tuna, then rinsed it well under running water and drained well again.
This is pretty much the best guacamole EVER! It's my most requested recipe for partys!
The calorie count is based on 1/2 an avocados worth of guacamole just to make it easy to compute, but I usually make 2-3 avocados worth.
The ingredients are based on my tastes, but you can add more or less based on what you like!
