I love french toast! I make a batch of this when I have extra time in the morning and freeze the extra so I can pop one in the toaster for a quick breakfast. My french toast is always topped with peanut butter and a little syrup (not included in calorie count).
A friend of mine posted this recipe on Facebook today. After I entered the ingredients, I realized that this recipe is healthy, but probably not as healthy as it COULD be. I'm substituting the oil for unsweetened applesauce. By cutting out the oil, I'm saving close to 50 calories/muffin. : )

This is an awesome recipe from the book How It All Vegan. My non vegetarian family love these! I made one serving size one pancake, that way you can just change the serving size according to the # of pancakes you eat.
i took this recipe from a cook book, but used half a cup of whole wheat flour and half white flour, and used low fat milk instead of full cream

i used whole wheat flour instead of regular all purpose flower to add some fiber

i have this allergy to wheat, so am trying to reduce the amount of wheat used in my favorite recipes, pancakes are one of the ;)
i used half millet flour and the other half regular all purpose flour for a beginning.. not bad at all!

I modified Cooking Light's morning glory muffin recipe to include carrots! Because, I mean come on, morning glory muffins are just plain wrong without carrots.
This is my favorite summer treat! Just mix yogurt and juice concentrate into popsicle containers and pop 'em in the freezer, and you've got a sweet high-protein breakfast treat or afternoon snack. This recipe was calculated with frozen OJ concentrate, but you can use any flavor--my favorites are orange pineapple and rasberry.
serve with sugar-free syrup.
I add chocolate chips for my daughter. much tastier because it can tend to be a little dry
Combine all ingredients in food processor and whiz it up. Cook on medium low heat. Flip over when bubbles form. Makes four pancakes.
