This crustless quiche-like dish is perfect for brunch or a light dinner. Serve with a mixed greens salad. You can save even more calories/fat by using light wheat bread and 2% cheese, but the nutritional info is based on regular. You can change the eggs/egg substitute ratio to suit you, also. 1/4 c. substitute = 1 egg.
