Introduction
OMGness! Whole grain, no fat or sugar added and LOADED with protein! OMGness! Whole grain, no fat or sugar added and LOADED with protein!Number of Servings: 10
Ingredients

1 c Whole Wheat Flour
2 c Old Fashioned Oatmeal- Plain
1 c Egg Whites
1 c Fat Free Cottage Cheese
3 t Baking Powder
1/2 t Salt
1 c Sweet Potato, baked
1 c Water
1 med ripe Banana
1 T Cinnamon
Directions
Use a left over baked sweet potato with no extra sugar or cook in microwave and let cool. Grind oatmeal to a flour in blender along with baking powder and cinnamon. Pour into bowl along with whole wheat flour and set aside. Blend egg whites, cottage cheese, sweet potato, banana and water in blender and pour over dry ingredients, stir. Cook in nonstick skillet.
Serving Size: Makes 10 large pancakes. Topping suggestions; banana slices, finely chopped pecans or walnuts, raisins, sugar free syrup, sugar free jams or honey.
