This rich gluten-free cake is made with almond meal in place of flour and uses the whole orange, peel and all. Mandarins may be substituted for oranges.

A very tasty, sweet and fresh vegetarian stew high in protein and fibre. My dad is celiac so he loves this recipe to get some yummy carbs. Instead of lentils try substituting chick peas. The recipe makes a whopping 9 1-cup servings. Usually 2 servings will fill me up as a meal or I'll have 1 serving as a snack.
This is a recipe that will work no matter what else you may do to it. You can exchange green chilis for tomatoes or corn for squash, etc...
