    1 c. cornmeal
    1 c. rice flour
    2 tsp baking powder
    1 tsp salt
    1 cup Stevia powder
    2 eggs, beaten
    rice milk (about 1 cup)


Combine dry ingredients. Add egg and enough rice milk until batter is of desired consistency (to resemble cake batter). Pour into greased 9x13 pan and bake at 400 about 25 min. or until browned (or cook as pancakes on stove-top).

Serving Size: makes 10 pancakes or a pan of 10 pieces of cornbread
