Ingredients

    2 lb ground beef (or ground turkey)
    1 onion, chopped
    3-5 celery sticks, chopped
    1 green pepper, chopped
    2 cups cubed yellow squash
    2 cups shredded zucchini
    1 TBSP cayenne pepper powder
    1 TBSP salt
    1 TBSP pepper
    1 lb of prepared dry beans
    1 pk taco seasoning (or 1 TBSP chili powder, 1 tsp cumin, & 1 tsp paprika)
    1 1/2 cups water (or as much needed to cover ingredients)
    1 pk ranch dressing mix (1 oz) or 2 tbsp ranch dressing
    2 qts pureed tomatoes (or stewed, or 3 cans of 14.5 oz tomatoes)

Tips

Serve with cheese, tortilla chips or corn bread


Directions

Brown meat, drain fat, add vegetables, cook until tender. Add all other ingredients, bring to boil, then simmer 30 minutes or transfer to crock pot after meat is browned. Can cook for 3 hrs on high or more hours on low in crockpot.
