A low carb, high protein vegetarian substitute for spaghetti and sausage
This is an Eggplant lasagna recipe from the Biggest Loser Cookbook. It mentions that ground turkey is sometimes added, and as that is how I prepared it, the ingredient is included in this version.
I created this recipe after discovering Arnolds sandwich thins on Spark people. I don't think you can find a more satisfying or lower calorie pizza-like snack than this creation. Of course you can add pepperoni or sausage if you desire but the calorie count would be much higher. If you are really watching those calories, this pizza will satisfy the need for a good pizza flavored snack.
It's delicious, filling, and doesn't need any seasoning at all. Substituting the sauce for a different flavor doesn't change the calorie content, usually. That's a plus because the Parmesan and Garlic Alfredo really adds some bang to this recipe!
This is a quadruple receipe that makes approx. 11 quarts.
It can be frozen.

This recipe was handed down for 5 generations (not mine, I am Polish) by my sisters best friend's great, great,great grandmother. I really like this recipe and I believe so will you. ( the only change I made to the original recipe was to use 1/2 ground turkey (85/15) and lean ground beef (93% lean) This makes A LOT of meatballs, but they will go FAST!!!
My spuse and i made this up the other day tryingto find something new to eat. The calculated calories do not include the pasta.
Note that you can also use other flavors of dressing, this is a fun recipie to play with.
