Ingredients

One bunch of Asparagus (1 lb)
3 Handfuls of Baby Spinach
1 c Pine nuts
1/4 c Extra Virgin Olive Oil
1 c Parmesan Cheese (Freshly Grated)
2 Cloves Garlic - Chopped
1/2 t Sea Salt
1/2 Fresh Squeezed Lemon (Juice Only)
Directions
1. Heat pine nuts in fry pan on medium heat, until nuts are barely browned and aromatic. Remove from heat and set aside. (Reserve 1/4 cup)
2. Boil Asparagus until barely becoming tender. (2 to 3 minutes. Remove from water and set aside a few of the asparagus tips as a garnish.
3. Add the asparagus, spinach, garlic, Parmesan, and 3/4 cup (reserve 1/4 cup) of the pine nuts to a food processor.
4. Purée and, with the motor running, drizzle in the olive oil until a paste forms. If too thick, thin it with a bit of the pasta water. Add the lemon juice and salt, taste and adjust seasoning.
5. Toss with Pasta, add reserved pine nuts and asparagus tips as garnish, and dust with parmesan cheese.
Note: Use approx 1 cup pesto with 8 oz dried pasta or 12 oz of fresh pasta.
