slice eggplant in round circles. Dip them in 2 scrammbled egg misture and then into a bowl of seasoned breadcrumbs. Fry them in olive oil over med high heat a about 1 minute per side. Set them aside.
In a casserole dish place enough spagetti sauce till cover bottom of dish. then add one layer of sliced eggplant. then add shredded parm cheese, then add mozzarella cheese on top of that. Sprinkle with chopped garlic. continue adding these ingredients in layers. End with sauce on top and shredded parm. Put in over covered at 350 degrees for 30 minutes. Take off cover and let brown for another 10 minutes.

A simple recipe that I grew up on. Not "traditional" Italian but it works in my home.
This recipe was created by throwing together items from the pantry, but it turned out really tasty, and highly nutritional. It makes enough to feed a family of four with leftovers for lunch!
