I was home sick today and while Pinterest'ing my sickness woes away debating whether I would be trekking to work, I found this picture of Lasagna Soup (original recipe featured on this foodie blog - www.joanne-eatswellwithothers.com/2012/10/

But the recipe (while very nice and simple) didn't quite ring of "LASAGNA" to me.. in fact it was missing the key part of a good gooey layered treat.. the ricotta cheese and the fresh "mozzarel!".. and then I thought of another recipe featured in this month's Bon Appetit for Ricotta Gnudi and Pomodoro sauce (www.bonappetit.com/recipes/2013/02/ricott
a-gnudi-with-pomodoro-sauce) and this recipe was born... a warm bellyful of lasagna flavors that was perfect to warm my body and soul.
What do you do if you have chicken waiting to be grilled but no good fixins' to fix it with ? Make a quick veggie filled lasagna !
Over the weekend I was in a cooking conundrum.. unexpected warm weather was making me want to grill something, but the need/want for some comfort food led me to want something like lasagna.. but wanting to make sure I got the veggy fix in for a "cheat full" weekend of fun food out... this was the compromise that totally hit the spot.
You could totally omit the chicken - however it did give the lasagna a summery taste.. maybe grill the zucchini and the leeks instead !
Very flavorful dish that my Mom whipped up one day. Everyone liked it. Hopefully reading the ingredients will give you an idea of what it tastes like. The sauce would taste great on rice or pasta.
Except for the crust this pizza is homemade, so you can control what goes into it, where it was grown, and you can change the cheese to soy if you would like it to be non-dairy. It is a complete blast to make!
This is meat loaf made without the meat and with lentils and almonds instead. It was great! Reminded me of dressing sort of.

Delicious and easy to make tomato sauce at the end of summer. This recipe is great to freeze, it will stay fresh up to a year in the freezer....just pull out a serving and use it on your next batch of pasta...it is amazing to use for lasagna :)
I left out the oregano and thyme, I like to add for each dish separately (fresh herbs become pungent and bitter if over cooked) .
My daughter is in 1st grade and loves these when she gets home. We have also made them with a spinach salad on the side for a healthy light dinner.
