This omelet is wonderful with fresh steamed veggies and feta cheese. (substitute shredded cheese of your choice if desired). This is a great 1,2 punch to satisfy and keep the sugar monster at bay. LOL

If using dried mushrooms, soak in hot water for about 15 minutes, or until rehydrated. Pour off liquid and chop mushrooms.
While mushrooms are soaking, spray pan with cooking spray. Heat pan and add onions to sweating stage. Add sausage and pork. Brown mixture, stiring as needed.
Add wine and reduce to about half. Add chicken broth, tomato sauce, tomato paste. Stir together. Add salt and pepper to taste. Turn heat down to simmer and reduce for approximately 45 minutes.
Use for any pasta dish.

lay ham slice flat, spread with Philladelphia cream cheese spread (whipped) and roll up pickle spear (or whole baby dills). Roll the ham around the pickle with the cream cheese in the center. they are yummy!

This is the Omlet that wasn't....it all taste the same, good. Nice thing about a recipe like this is that you can make it your own and have fun with it.
