Love this recipe! After grilling shrimp, serve with artichoke hearts on bruschetta, or on top of a summer vegetable salad. Fresh and healthy!
Reminds me of something you'd get at an Italian recipe, minus the heavy cream sauce. Tastes wonderful!
Sautee shrimp with 1 tbsp. butter until cooked (they will turn red once done-do not overcook). Boil 5 cups dry spaghetti- 1/2 the box, cook until al dente, drain, & mix with 1 tbsp. olive oil to avoid sticking. Bring to boil 1 cup fat free evaporated milk, 2 tbsp. butter, and a dash of corn starch. I use a spritz of lemon juice, lots of lemon pepper, a dash of basil, italian seasoning, garlic, salt/pepper. Combine those into mixture. Once it has a nice consistency I pour it over the pasta and add the shrimp.

I was afraid my husband would hate these because of the dressing used in the slaw. Wrong - he LOVED it as did I.
I adapted this recipe from an Alaskan cookbook. My husband and I fell in love with this dish. You can further cut the calories by using a no fat or reduced fat sour cream. Whatever you do - don't skip the onions!
Great for a light supper in the summer when fresh herbs are plentiful and less expensive, but delicious all year round.
