I came up with this when I wanted a low carb lunch and had all these ingredients on hand. It is delicious, if I do say so myself!! :o) It would be easy to make a double or quadruple batch, depending on how many servings you needed. Next time I'll try putting some black beans and/or corn into the salsa mix.

A little high in fat, but you could fix that by omitting or reducing the amount of nuts and avocado!

I don't remember where I first got this recipe. It's not my creation. The dressing is absolutely delicious. Originally it calls for nutritional yeast flakes but I don't have any, so I just make it as listed here.
Finely chop cucumber, radishes, celery and mint. Add remaining ingredients. Season with salt and pepper to taste. I use Lite Rice Wine Vinegar to cut down on the sugar content.
