This recipe is a family favorite and is originally from my mother Shirley Crogan, an excellant down home, no nonsense cook. This recipe along with her Thousand Island Dressing were published in our local newspaper recipe contest some years ago. 16 oz edamame (shelled and frozen)
29 oz can black beans (rinsed well)
1 small red onion (diced finely)
1 cup tomatoes (chopped)
3 T red wine vinegar
3 T olive oil
