Introduction

Refreshing summer salad with parsley and bulgur. Refreshing summer salad with parsley and bulgur.
Number of Servings: 5

Ingredients

    1/2 cup Bulgur
    1 cup water
    1 1/2 cup parsley, minced
    2 tsp dried mint
    2 Tbsp onion, finely chopped
    1 tomato, cut into 1/2" cubes
    1/3 cucumber (8 1/4"), chopped
    1/4 tsp coarse sea salt
    1/4 tsp ground black pepper
    1/4 tsp ground cumin
    1 1/2 Tbsp lemon juice (or one lime)
    1 tsp olive oil

Directions

Let the bulgur soak in 1 cup water for 30-60 minutes, until softened.

In a large bowl, gently toss together all ingredients but oil. Chill for one hour to blend the flavours.

Before serving, toss with the oil.

Makes 5 1-cup servings.
