This is healthy veggie wrap with a Mediterranean twist. You can use more or less veggies depending on the size tortilla you use. Kalamata olives are also a nice addition if you use a fat free or low calorie greek dressing. Enjoy!

A recipe from Jessica Seinfeld's cookbook. This was a major hit with my toddler. The recipe calls for part-skim ricotta instead of cottage cheese, but I had to sub because I didn't have any on hand. Very yummy and satisfying.
