A recipe from Jessica Seinfeld's cookbook. This was a major hit with my toddler. The recipe calls for part-skim ricotta instead of cottage cheese, but I had to sub because I didn't have any on hand. Ingredients

    Bean Dip:
    1 cup canned white beans, drained and rinsed
    2 tsp lemon juice
    1/4 cup low fat cottage cheese, or part-skim ricotta
    1 tsp olive oil
    1/2 clove garlic, rough chop
    1/4 tsp salt
    1/8 tsp pepper

    Sandwich:
    8 tbsp bean dip
    8 tbsp shredded part-skim mozzarella cheese
    4 slices whole wheat bread

Directions

Put bean dip ingredients in mini food processor and blend until smooth.
Toast bread lightly
Spread 2 tbsp dip on each slice of bread
Top with 2 tbsp shredded cheese.
Place in toaster oven or under broiler and toast until cheese is melted and bubbly.
Makes 4 servings. Any extra dip can be stored up to 1 week in fridge.
