This is a personal recipe of my own creation.I never had Quinoa before and had just learned of it's existence! It was made by experimentation. It is so delicious, and actually makes me think of fish just a little bit! (Probably cause one of the herbs is dill...) Anyways, here you go.
Can be made with a variety of vegetables - this one was made with squash, sweet potato and spinach
Using Carbquick (netrition.com) and Flax meal, this bread is similar to the Arnold's Sandwich thins.
Just made this up as I went along and they turned out awesome. Lasted about 5 minutes with my husband and I chowing down. Obviously, you'll need to double or triple everything if you're making for a family. Enjoy!
Mix all wet ingredients in mixer. (I use a Bosch) Grind 9 cups of hard red wheat berries (13 cups ground flour) and add half of the flour to the mixer. Add yeast and mix on high for 1 minute. Then add the rest of the flour and salt and mix on low for 5 minutes. (this kneads the dough) Turn out on oiled surface and split into 4 loaves. Either make cinnamon rolls, pizza dough, or bread out of them. Bread is great rolled in sunflower seeds, nuts and seeds then put into greased pans. Let rise for 30 minutes and bake for 30 minutes at 350. You will know it is done if tapped on top and sounds hollow.
I enjoy putting a fruit sauce on my crepes, pancakes, and waffles. You can substitue almost any fruit you like in the recipe above and it should still make a nice sauce. It may change the nutritional values depending on the fruit you use. The cornstarch is used only for thickening you can also modify according to taste but I think some is necessary otherwise it is too thin & runny.
