I think I needed to heat the pan longer, I felt the bread wasn't toasty enough. Next time I think I'll add some salt and pepper. I will definitely try it again with a hotter pan because i love the idea and simplicity!
One of my favorites! I used whole grain/nut bread which upped the carb/protein/fat a little bit.
