My girlfriend and I were looking for a high protein/low fat recipe that we could eat once we started weightlifting and this is perfect. We've made this many many times over the past few years and have always loved it.
Great recipe. I made all 6 servings and froze the others so I had meals ready to go. I cut out the rice to make it a low carbohydrate meal as I think you get plenty of carbs from the diced tomatos, tomato paste, and vegetables. Good recipe though. I think you will enjoy it.
