I have made this several times and it is great! I love the fact that I get the taste of eggnog without the huge number of calories in the product sold in the stores. The pudding gives it the texture and the nutmeg is delicious. I rarely comment on recipes, but I had to on this one!
I'm the only one in my family who likes eggnog so I don't feel like I can buy even the "light" dairy eggnog because even that is way too high in calores/carbs/fat. This was delicious and I will definitly be making it again! I used regular 8th continent vanilla as I couldn't find the light van. soy.
Made this for Thanksgiving and it was a great alternative to the high fat, sugar laden egg nog. I will make this again for the holidays.
