This was amazing. So tasty and so easy. And the calories are perfect for a lo-cal veggie.
I roasted acorn in a 400-425 degree oven in a baking dish. Cut side down and added some water to the dish. It takes about 45 minutes to get soft. Then I turned it over and brushed with the pumpkin butter I found some pumpkin butter that is only 10 calories per tablespoon. Great. A favorite.
