Mine did not brown very much. Is that 2 or 3 cups of sourdough starter or 2/3 cup? I used 2 cups starter. The batter was perfect consistency with the other ingredients. It needed salt in the batter that other recipes call for—tasted a bit raw. I let the oats sit in the wet ingredients 5 minutes.
