You can cut the calories way back for this dish by using grated cauliflower in place of the rice. And don't think you won't like it. I din't realize how good it was till I tried it.
Very good. I would suggest cooking the egg mixture first before adding to the rice/veggie mixture. Also a little salt and pepper would be good. I added shrimp too.
