The peanuts are worth the fat content. Even my hubs liked this - and he's not an adventurous eater!
I made this last night and we just loved it. I did start out by adding chicken but stuck to all the recommended spices and veggies. Also, instead of adding the peanuts, which i did not have, I used PB2, which is a defatted peanut powder. This allowed me to use it as a thickener and for taste
Sounds colossally wonderful. The sodium content is way too. I'll use dried chickpeas (soaked and cooked in advance, of course) and tomatoes canned without added salt.
