Nutrition & Calorie Comments  

Quick and easy! I made a few substitutions, less sugar(1/3 C sugar, 1/3 C splenda), used buttermilk(I was out of milk), used applesauce instead of butter and split the flour with whole wheat flour. I'm sure that they would have been great with out the substitutions though!
I substituted a cup of the white flour for a cup of whole wheat flour, and added a teaspoon of vanilla. I also used natural evaporated cane juice in place of regular sugar. It is good, but a little less sugar would still taste great. Next time I use this recipe I will try three quaters cup.
I made these the other day...had just picked a bunch of blueberries! I gave some to my family and they all loved them...I doubled the recipe and it made about 96 mini muffins...I'll have to freeze some...I added an extra cup of blueberries. It came out to about 53 calories for a mini muffin!
