This is an excellent recipe! I substituted Splenda for the sugar, and I also added yellow squash. We loved it!
I don't think people who are trying to lose weight should eat white pasta. Why not try whole grain pasta? It's got more fiber and nutrition.
Next time I would marinate the veggies first before adding the pasta. It soaked up all the marinade in the 24 hours. Very good though. I also used Splenda instead of sugar.
Will make this one, great for this hot weather, will use splenda instead of the sugar, though.
